Sendai Special Edition Miso 300g
Kawakei's top grade: tokusei (specially made) Sendai miso — the darkest, deepest miso the house brews, for when you want to go even further. A mahogany-red aka-miso with a long, slow-building savoriness.
Kawakei has been brewing miso and soy sauce in Wakuya, a small town in Miyagi, since 1909 — now in its sixth generation. This is their elevated grade: a high share of Japanese soybeans and rice koji worked into a dense, intensely savory paste. Less sweet, more umami, more of everything.
It only recently left Japan. This miso was brought to Europe for the first time in 2025, through a new partnership between Kawakei and importer Shiga and marked by a formal shipping ceremony in Japan — a genuine debut rather than a long-time export.
Behind it stands a decorated brewer: Jōji Kawana, named one of Japan's "Contemporary Master Craftsmen" in 2015 and awarded the Yellow Ribbon Medal of Honour in 2018 — a state decoration conferred in the name of the Emperor for mastery of one's craft.
Reach for it when the miso should lead, not whisper: a deeply savory soup, a glaze for black cod or aubergine, a marinade that does the work on its own, or stirred straight through rice and greens.
