Sendai Miso 300g
A classic red miso from Miyagi, brewed by a family that has been at it in the old gold-mining town of Wakuya since 1909 — now in its sixth generation.
This is aka-miso with backbone: a high share of Japanese soybeans, rice koji and salt, matured long enough to turn deep reddish-brown and properly savory. Fuller, saltier and far less sweet than the pale spring misos — built for umami.
The reason it tastes like this is the hand behind it. Master brewer Jōji Kawana was named one of Japan's "Contemporary Master Craftsmen" in 2015, and in 2018 received the Yellow Ribbon Medal of Honour, a state decoration conferred in the name of the Emperor for mastery of one's craft.
Use it where you want depth: miso soup with real body, glazes for fish or aubergine, marinades, dressings, or stirred into a braise. A little carries a long way.
