Oodate Tonburi is a rare specialty from Akita Prefecture, officially registered as GI (Geographical Indication) by the Japanese Ministry of Agriculture. Made from the processed fruit of the Kochia scoparia plant, it’s often called the “caviar of the field” for its delicate, caviar-like texture. Cultivated under strict JA Kitaakita standards, only Tonburi from this region is used, ensuring unmatched quality.
Traditionally enjoyed in Akita with shoyu and grated ginger, Tonburi is also a key ingredient in Buddhist vegetarian Shojin-ryori cuisine and pairs beautifully with rice, seafood, or light Japanese appetizers.
