The banana in this castella is Kanjukuo, known as the “banana king” – look for the crowned, moustached banana on the pack. It’s grown in highland plantations, around four months longer than a standard banana, which builds up starch and a sweeter fruit once ripe.
Maruto bakes it into a hanjuku castella: “half-cooked”, like a soft-boiled egg. The result is dense, moist and soft enough to melt on the tongue. Hokkaido milk adds the finishing touch.
Lift the cake out of the tray, cut it into wedges and serve it with green tea, black tea or coffee.
