Matcha Strainer
This fine stainless steel sifter (furui) is an essential tool for perfect matcha. Due to natural humidity and static electricity, the extremely fine matcha powder tends to form small clumps. If you add water without sifting it first, even the best bamboo whisk (chasen) will not be able to mix it completely smooth. The ultra-fine mesh of this sifter breaks up the powder effortlessly, unlocking the full umami flavor and creating a perfect foam, whether you are preparing a traditional usucha or a creamy latte.
Simply place the stainless steel sifter over your matcha bowl. Add your desired amount of powder and gently push it through the mesh using a traditional bamboo spatula (chashaku). Afterward, pour in hot water at around 80 degrees Celsius and whisk it until frothy. Since moisture can get trapped in the fine mesh, it is best to dry clean the sifter or gently wipe it out after use.
