Kawakei's top-grade honjōzō (genuinely brewed) soy sauce. The brewery's koikuchi soy sauce has twice been awarded Japan's Minister of Agriculture Prize, one of the country's highest honours for soy sauce.
It comes from a family brewery in Wakuya, a small town in Miyagi, going since 1909. This is the soft, aromatic end of soy sauce: slowly brewed with careful temperature control to lift the aroma, finishing round rather than sharp, with a quiet natural sweetness and an almost silky feel on the tongue.
It's a soy sauce to taste raw, not boil away. At its best straight from the bottle — over sashimi or chilled tofu, a few drops on rice or a fried egg, as a dip for gyoza — where the aroma and roundness actually register.
