For the Masuzuka miso manufactory, this unpasteurized Orignal Mame Miso is a pure symphony of soybeans and salt, composed in the incisive climate of Japan and its microorganisms. The traditional miso manufactory was founded in 1928 in Aichi Prefecture, which is famous for its fermented foods all over ther world. Masuzuka ferments exclusively in wooden barrels and specialises in unpasteurised miso products. The soybeans are grown by farmers who are trusted and meet the high quality standards.
This Original Mame Miso is a pure 100% dark miso made from regional soybeans. The outcome is a fine unpasteurized soybean miso paste without solid pieces and aged for over 18 months. It is perfectly suitable for miso soup, dengaku or marinating meat. It has a very strong and deep taste.
