Most soy sauce doesn't carry a date. This one does: brewed on 20 February 2021, batch no. 1652, then left to mature long and slow – with no heat used to hurry the fermentation along. It's a naturally brewed dark (koikuchi) soy sauce made from 100% Japanese whole soybeans and wheat, and it tastes the way that sounds: deep and aromatic, but soft and rounded rather than sharp, with the kind of body that only long, slow maturation gives.

This is a finishing sauce – one for the table, not the pan. Use it where you'll actually taste it – a few drops over sashimi, on a bowl of rice and raw egg, with grilled fish or meat, or anywhere a splash of dark soy is meant to be the last word.

Suehiro have been brewing in Tatsuno, Hyōgo since 1879 – the town that gave Japan its light usukuchi soy sauce, fed by cool air and clean mountain water. They're one of the few houses still brewing naturally here, with nothing added and nothing rushed. This dated, limited bottling is their dark sauce given the full long-maturation treatment, released one vintage at a time.
