Kawagoeshibori Soy Sauce 100ml
This is a rare single-origin soy sauce that captures the true essence of Kawagoe, the historic merchant town known as "Little Edo." Produced by Fueki Shoyu, a brewery founded in 1789, this limited-edition sauce is unique because it is not only brewed in Kawagoe but also uses soybeans and wheat grown exclusively in the local region.
While most modern soy sauces are fermented in steel tanks for a few months, Kawagoeshibori is aged for a full year in large, traditional Yoshino cedar barrels (Kioke). The natural microorganisms living in the wood give the sauce a mellow, rounded flavor and a deep, aromatic nose that industrial sauces cannot replicate.
Because it is pressed locally and bottled fresh, it retains a vibrant, fresh flavor profile with a rich, savory body. It is an authentic taste of Edo-period craftsmanship.
