Soy sauce (Shoyu) lies at the very heart of Japanese cuisine and Shoda's "Double Fermented" naturally brewed Nidan Jukusei soy sauce (JAS certified - Japanese organic standard) from Gunma prefecture stands at the pinnacle of quality.

This shoyu is produced using a specially-developed brewing technique: It is about  fermenting soy sauce with previously fermented soy sauce and the result is such a  wonderful depth of flavor and umami. Highly recommended for everyone, taking the next steps on trying soy sauces other than those wellknown brands.
