Premium Kioke Miso Limited Edition 300g
This award-winning miso is the pride and joy of Kohno-san, a dedicated "Koji Freak" and 5th-generation master brewer from Okayama Prefecture. It is a rare delicacy, fermented in the brewery's most prized wooden barrel, named "Kojiro", which has been in use for over 100 years.
What makes this miso truly unique is the rice preparation. Similar to the process used for premium Sake, the rice is polished to 70%. This removes impurities and excess proteins, resulting in an exceptionally refined aroma and a sophisticated bouquet that standard miso cannot achieve.
With a low salt content of just 10%, the flavor is mild, naturally sweet, and incredibly smooth. It is best enjoyed raw to fully appreciate its delicate complexity.
