This Shoyu Koji is a bold, artisanal seasoning crafted in the historic soy-brewing town of Oono, Kanazawa. Made by Naogen Shoyu, a family-run producer since 1825, this thick and grainy sauce combines naturally brewed soy sauce with freshly fermented rice koji—yielding a mellow, sweet-salty umami unlike anything else.
The secret lies in the blend: aged Moromi mash gives the sauce its rustic, textured body, while the koji rice adds a round sweetness and depth. Less salty than typical soy sauce and rich in flavor, it’s perfect for dipping, drizzling, glazing or marinating—especially when you want that little extra layer of complexity.
