Sourced entirely from local farmers in the remote Okuizumo region of Shimane Prefecture, these beans are known for their lower yield but significantly richer flavor profile.
Founded in 1903, Morita Shoyu is one of the few remaining breweries that strictly relies on locally grown ingredients and traditional methods. This soy sauce is aged for two years in large cedar barrels (Kioke), allowing the natural cultures living in the wood to develop a complex, deep character.
The result is a soy sauce with a distinctively elegant consistency. Much like a high-quality olive oil, it gently coats ingredients rather than soaking into them immediately. It offers a powerful umami punch without the sharp, aggressive saltiness of industrial sauces. Its mellow nature makes it an incredible "secret ingredient" that enhances the natural flavor of a dish without overpowering it.
