This sweet and rich shoyu is very much in the style of the southern Japanese shoyu. It is slightly sweet and with red sake - Akazake from the Kumamoto province seasoned for more umami. Therefore, it also has a light viscosity and is perfectly suitable for sashimi, sushi and cooking of course.
