Fukami is a 4th generation family business and grows their own Ume (Japanese plum) which then is processed further into Umeboshi (pickled plum) and and Umesu (plum vinegar). Their company is located in Wakayama province, which is famous for their Nanko Ume fruits.

The Ume for this Umesu vinegar are grown without pesticides or artificial fertilisers, as is the red shiso that gives the vinegar its beautiful colour. This Umesu has especially much umami in the finish and an intense smell of the ume fruit. Umesu is always salty, so it should be used sparingly. In macrobiotic cooking, for example, simple pickles are made with it. Simply soak half a radish overnight in a little Umesu overnight.

When cooking rice, 1 or 2 tablespoons of Umesu can make the rice taste 'fresher' again. Add the vinegar to the rice water before cooking.
