Pickled sakura leaves are salted cherry leaves, very traditional and very famous during Sakura season. The cherry leaves are picked when they are young, as their texture then is tender and therefore easy to use after. The sakura leaves then are blanched and marinated in salt for a few days. The harvesting of this product of course coincides with the cherry blossom season. The leaves have a slight sweetness and the natural smell of cherry blossom, they give off a very pleasant fragrance and new flavors that the sakura fans are so crazy about.
This very special aroma of sakura is due to an organic compound called coumarin, which reminds to cinnamon bark and tonka bean. These special leaves from Japan can be used whole, chopped or minced in order to enhance grilled veal, beef, fish and also can be nice for steamed fish tartars...In Japan, they are traditionally used in pastries.
