Soba shiro shoyu - is a naturally white soy sauce - based on buckwheat and lupins. The golden yellow color and the mild taste make the white buckwheat shoyu ideal for  refining light fish and vegetable dishes. The organic Shiro Shoyu matures for two years in oak barrels from legendary whisky maker La Phroaigue and gives this shoyu a slightly smoky taste with an impression of Japanese Kasuobushi Dashi. This results in a light yellowish soy sauce with a mild, fine, slightly sweet aroma.

Shiro Shoyu is suitable for seasoning or pickling vegetables and fish. Light-colored ingredients such as asparagus, cauliflower and delicate salads in particular can be refined with it without discolouring. The white soy sauce supports and balances the taste of the dishes and is a popular seasoning for kaiseki dishes.
