The Japanese Sansho pepper (Japanese citrus pepper) is characterized by a unique fresh taste that is very different from traditional black pepper. It gives the dishes an interesting complexity, ranging from citrus notes to a slightly tingling spiciness. What's special about Sansho pepper is its "tingling" sensation on the tongue, which provides a pleasant sensory experience similar to that of a mild anesthesia. This tingling feeling is due to compounds in the peppercorns that affect the receptors in the oral mucosa. It's essential for many Japanese spice mixtures and gives a perfect match to soups, fried stuff and BBQ's.

The KANEICHI company was founded in 1880 in a small village in Wakayama Prefecture. Sansho pepper grows wild in this area, which is very special and the founder recognized its high value as an aromatic spice and refined the best Sansho tree as the mother tree. The seedlings were distributed free of charge to local farmers to establish a local agriculture and production. Nowadays, Wakayama Prefecture is the largest producer of sansho pepper in Japan and is world-known for this quality.
