Mimi ferments Shiro Miso is also characterized by its fruity-sweet aroma, notes of apricot and parmesan. This organic white soybean paste is fermented for two months in ash wood barrels. 

The name Shiro miso – white miso – refers to a young, mild miso paste based on soybeans and rice. Shiro Miso retains a naturally light color and mild taste thanks to the high koji rice content and short fermentation time. 

This BIO white miso fits perfectly into classic Japanese cuisine but you can use this to make light miso soup or miso marinades in no time, even use it as a bread spread. It is excellent for seasoning mild dips or salad dressings and is suitable for marinating white meat and white fish or with melted butter for asparagus, leeks or cauliflower.
