Koshihikari grain is lucidly white and round, slightly bigger than the grain of Akitakomachi. And because of its elasticity and stickiness, it is ideal for making sushi and onigiri.
Koshikari also has the perfect balance between hardness of the core of the grain and softness of the outside layer of the grain.
