Fukii Junmai Akiagari Sake 720ml
Akiagari refers to a sake that is brewed in the winter until the next fall (AkI) at a constant temperature is ripened and therefore becomes very round and tender. Akiagari Fukii Junmai is a yearly limited edition sake with only a few bottles produced. Enjoy it slightly chilled from a wine glass!
This rather dry Junmai with nice acidity and umami was founded in 1830 in Ishikawajozo, Mie Prefecture and is still brewing in the listed buildings today. What makes this brewery so special? Of course the love for handcraft, the dedication to Koji, but above all the fantastically soft water! This water is even softer than that in Kyoto/Fujimi and so the sake brewed with it is also very mild, soft and round. The springs are 76 m and 200 m below the water and are fed by the Suzuka mountain range. Ishikawajozo's sake is not only award-winning in Japan, it also regularly receives awards at the Kura Master Competition in France.
