Fukii Daiginjo Sake 300ml
A little 'wow' for this Fukii Daiginjo escaped us at the first tasting. This sake is probably the most typical of Ishikawa Syuzo because of the ultra-soft water, with that this fantastic Daiginjo is brewed here - you can really taste it! The smooth finish is reminiscent of cotton candy, which melts in the mouth to make it best to describe. Perhaps one could imagine the mouthfeel of a cloud in the blue sky? This sake comes with a light fine ginjo bouquet but rather dry and clear.
Founded in 1830 in Mie Prefecture, Ishikawasyuzo is still brewing to this day
in the listed buildings. What makes this brewery so special? Of course, the love of manual work, the dedication to the koji, but most of all the fantastically soft water! This water is even softer than the one in Kyoto/Fujimi and that's how it is Sake brewed with it is also very mild and soft and round. The springs are 76 m and 200 m under the water and and are fed by the Suzuka mountain range. Ishikawajozo's sake are not only award-winning in Japan, also at the Kura Master Competition in France regularly awarded.
