A complicated process that requires a lot of manual work and finally it takes 2 years to brew this wonderful Kimoto Junmai sake! Kimoto sakes always have a bit more acid and are therefore ideal for newcomers who otherwise like to drink wine.
For over 400 years Watarai Honten has been brewing under the brand name 'Dewanoyuki' excellent types of true Japanese Sake in Tsuruoka-City in Yamagata Prefecture and specializes in Kimoto Sake, in which only naturally cultivated lactic acid is used.
