Koushin and Donko are the same mushroom, but the umbrella is from Donko closed and the mushroom is very fleshy as a result. This makes the Donko more suitable if you want the full flavor who wants to enjoy mushrooms.
In order to get the best result, Koushi should last 4 to 7 hours be soaked in cold water.
The process can be shortened with warm water. Soaked shiitake will keep in the fridge for up to 3 days.
