Auzuki beans are such a quintessential ingredient for Japanese wagashi sweets and even more also for some hearty dishes. These small, deep red coloured beans have a distinctive shape and are common to many asian countrys especially Japan and Korea. The boiled azuki beans are mixed with sugar to make a traditional sweet bean paste which is used in desserts and the sweet soup shiruko. These dried azuki beans have grown in the Tokachi area of Hokkaido, which is famous for their delicious vegetables and of course, azuki beans.

Cooking Instruction: Soak for 1-2 hours.Drain water and replace with fresh, cold water for cooking. Place on the stove and bring to a boil in a large saucepan with a lid. Once boiling, reduce heat to low, while tilting the lid slightly to allow steam to escape. Leave to cook for about an hour, or until tender.
