Morita Shoyu is a traditional brewer from Shimane Province in the southwest of Japan's main island of Honshu. Founded in 1903, Morita still brews only with regional or Japanese basic ingredients and places great value on quality and naturalness. You will realize when you taste this unique flavour.

This bottle here is Morita's unpasteurized (nama) koikuchi soy sauce. Nama means 'raw' or untreated. In terms of Shoyu this word is used to designate the products that are not pasteurized. Nama Shoyu is very a rare product in Germany. A special filter process preserves the health-promoting enzymes. Nama Shoyu has a special bouquet that is appreciated by ramen chefs to taste the soup at the end.

Of course this product is made with the best ingredients: soybeans from the provinces of Shimane, Yamaguchi and Hiroshima, their bordering regions, and wheat from Simane or Yamaguchi. The result is aged for at least 1 year in a wooden barrel, which only a few 1% of all shoyu producers in Japan still do. It turns out into a very soft and subtle deep aroma. Try it and you will stick to this sauce.
